Portuguese Potato and Sausage Stew

When our son moved to Rhode Island we got to eat at some fabulous Portuguese restaurants. I was talking with a co-worker and found she was of Portuguese descent and she shared some cookbooks with me. This recipe, modified a bit for availability of ingredients comes from one of those books.

This is a nice one pot meal, which will warm a body up on a cold winter's evening.

Recipe

Sauté and drain grease from about ½ lb of sliced Portuguese sausage, either Chourica or Linguica.

Sauté one chopped onion and one stalk of chopped celery. Add about 2 cloves of minced garlic and add the sausage back in.

Add one can of diced tomatoes with juice and one can, drained, of green beans.

Add one bouillon cube.

Add the following:

1 pinch of cinnamon

1 pinch of cloves

¼ teaspoon of cumin

1 teaspoon of paprika

Add some heat of your choosing, depending on how hot you like it and how hot the sausages are. I added some black pepper and crushed red pepper. If you have any, some piri-piri sauce or Tabasco can be added.

Add 2 or 3 potatoes cut into wedges, and simmer until potatoes are done, about 40 minutes.

If you can find it, Portuguese white bread goes great with this. Around here, Shaw's supermarket sells it in their bakery department.
