Chicken Salad in Melon (for Two)

muskmelon for redwork embroidery

 
40 green grapes cut in half lengthwise, (Kitchen shears work great for this).
1/2 cup onion, diced
1/2 cup bell pepper, diced
3/4 cup cooked chicken breast, diced. (Canned chicken, or leftover chicken would well work, too).
2 teaspoons of low fat mayonnaise
Pinch of salt, and a few twists of freshly ground pepper, to taste
 
Mix all the above ingredients together in a bowl.
 
Cut Cantaloupe in half and remove seeds. Serve the chicken mixture in each cantaloupe "bowl." 
 
Quick, easy, delicious and hardly any cleanup. Serves 2.
